Fresh out of Paris' accomplished culinary school, Niloufer Mistry started catering out of her Napeansea Road home when she was just 21, because she was sure she didn't want a "boss on her head to curb her creativity". She chose to dither off the beaten path again when she decided to dabble in French cuisine, all because she knew she could make it work. "French food is so wholesome. Who wouldn't warm up to it?", she says. Niloufer's repertoire includes vegetarian, non-vegetarian and sweet pies, quiches, flans, crepes, croissants, ratatouille, roulades and wine gravies. "The whole dish is planned according to what the customer wants. You want a double crust? You got it. A mushroom and chicken filling? Done. You want to place an order for just one person? That's cool too," she says. The only catch in her case is that you will have to pick up the goodies from her home.

Bengali Maharaj whips up mean tacos

If the word Maharaj conjures images of a well-fed, dhoti-clad cook stirring up rich food, here's a 20th century Maharaj you'd want to meet. Hailing from Kolkata, Vikram Maharaj, who picked up his culinary skills while watching his father cook, learnt all that he knows about Mexican cuisine from "a simple cookbook", he admits. "I used to experiment often, and I am lucky it worked," he smiles. After arriving in Mumbai, Maharaj worked with famous vegetarian twin joints New Yorker and Cream Centre, before deciding to launch his own catering company that delivers Mexican food for groups of 10 and above. "Onion Rings, Nachos, Tacos, Enchiladas...," he rattles off, "they are all my specialty. Order once, and you are going to come back for more." Maharaj and his team also dabble in Italian food, and deliver Pizzas and Pastas on request.
