Recipe:u00a0Bhapa Shorshe Begun (Baked Eggplant in Mustard)
Ingredients:
2 long eggplants
Salt to taste
1/4 tsp turmeric powder
little olive oil
2 to 3 tbsp mustard paste
1 tsp mustard oil
1 to 2 finely chopped green chillies (or as per taste)
Finely chopped coriander leaves (to garnish)
Method:
Slice the eggplants lengthwise into 8-12 pieces.
Marinate with salt and turmeric powder for 5 minutes.
Over medium heat, bast a non-stick frying pan with little olive oil.
Place the slices in the pan and cover it to bake.When a little water starts
releasing from the eggplant and the slices are very slightly charred, turn them over to continue baking.This whole process should take about ten minutes.
While the slices are baking, make a mustard paste amounting to 2-3 tablespoons. For added flavour, whisk the paste with mustard oil.
Pour the paste over the slices and mix well but gently. Cover and cook for 5 minutes, (If you take too long at this stage, the dish will turn bitter.)
Take off the lid, sprinkle chopped coriander leaves and green chillies over the slices. Cover and switch off the stove.
In another 5 minutes, the dish will be optimally flavourful and ready to be served.
